Whole bunch fermentation with minimal extraction. Maceration for 2 weeks with the skins and then gently pressed and moved to concrete tanks where it rested over the winter. Bottled in Mars 2017.

Direct press and then nearly the whole fermentation took place in stainless steel tanks, bottled in the end of November 2017 with some sugar left for continuously fermentation to create fine bubbles.
