3 weeks carbonic maceration for sand and gravel soil grapes, 4 week skin maceration for clay and limestone. Aged 6 months on the lees in concrete before bottling in April 2017. 2016 was a very small vintage and gave very low yields in many parts of France. Therefore Xavier bought some organic Grenache grapes from a friend in Rhône and also some Gamay from another friend in Loire-et-Cher. So this is a rare blend that’s the result of a though year.
